- Slice the pitaya in half and spoon flesh into a blender. Add liquid kefir.
- Scoop all the frozen kefir into the blender and blend until smooth.
- Transfer the mixture back into the frozen kefir pint container or a plastic container with a lid and return to freezer for 1 hour before serving.
- Alternatively, freeze the blended mixture overnight and remove from the freezer 30 minutes before serving to soften.
