Perfect for a morning snack or afternoon treat, these bite-sized energy balls are the answer to your pumpkin spice cravings. Keep them refrigerated or even throw them in the freezer so you can enjoy them throughout the week.
- ¼ cup Pumpkin Spice Lowfat Kefir
- ½ cup dates, pitted
- ¾ cup rolled oats
- 2 tbsp maple syrup
- ¼ cup coconut flour
- 1½ tsp vanilla extract
- Blend these ingredients in a food processor or high power blender
- If the dough is too wet add more coconut flour to the mix till you can form a ball. You can eat these right away or place them in the freezer and enjoy through the week.
- Add ¾ tsp ground cinnamon if it needs more pumpkin spice flavor
