Directions

  1. Clean and chop the red beets. Roast them in an air fryer or in an oven at 400 degrees utnil the beets are soft. Let cool completely before blending (about 30-45 minutes). Once cooled, add them to a food processor and blend until smooth. Set aside.
  2. Mix together the pancake mix according to the package instructions with a couple modifications: Sub the water ingredient for Lifeway OWM Vanilla Kefir. Fold in the roasted and blended red beets from step 1 to the pancake and kefir mixture.
  3. Cook the pancakes according to package directions.
  4. Top the pancakes with cut strawberries, maple syrup, and/or powdered sugar. Enjoy!
