Directions

  1. In a medium skillet over medium-high heat, drizzle olive oil and add the chorizo once the pan is hot. Saute until cooked through, breaking it up as it cooks.
  2. Meanwhile, poach your eggs with a sauce pan filled with water and a splash of distilled white vinegar.
  3. Toast your bread, spread on farmer cheese, and add avocado slices, season with salt and pepper. Top with chorizo and egg. Add more salt and pepper as needed.
