Thanksgiving is in exactly two days, which calls for a toast… Citrus & Fennel Toast! The bright colors and interesting textures of these gut-healthy ingredients make it easy to create a stunning presentation that looks like a piece of art. Fennel and red onion have powerful antioxidants and are a good source of vitamin C; dill is a good source of magnesium and vitamin A; egg has protein, omega-3 fatty acids, and HDL cholesterol, which is the good cholesterol that is linked to supporting heart health; orange is an excellent source of vitamin C, and our farmer cheese has 12 live and active probiotic cultures that may support a healthy immune system and a balanced gut microbiome. Your Gut Matters

- 1/2 citrus (orange or grapefruit)
- 2 slices dark rye or whole wheat bread
- 1 soft boiled egg
- 1/2 cup Farmer Cheese
- 1 bulb of fennel (shaved)
- 1 tbsp fresh dill and fennel fronds
- 2 tbsp diced red onion
- sprinkle of chia seeds
- 1-2 tbsp olive oil
- salt for seasoning
- Toast the bread, brush with olive oil.
- Layer toast with farmer cheese, red onion, shaved fennel, oranges, and soft boiled egg.
- Garnish with dill, fennel fronds, chia seeds and salt.
