Hei, god morgen (Translation: Hello, Good Morning in Norwegian). Start your smoothie Saturday spooning up our cold blueberry smoothie bowl inspired by the traditional Norwegian dish, Scandinavian blueberry soup. Blend frozen blueberries, lemon juice, cinnamon, and cardamom with our blueberry kefir for probiotic blueberry bliss in a bowl.
According to the U.S. Highbush Blueberry Council, blueberries are high in many essential vitamins and minerals, including:
- Vitamin C
- Vitamin K
Not surprisingly, blueberries get their name from their deeply pigmented blue color- an indication that they’re full of antioxidants, specifically anthocyanins. Antioxidants fight carcinogenic free radicals, which can cause cell degeneration, DNA damage and cancer.
If those aren’t strong enough reasons for you to increase your blueberry intake, the bite-sized beauties are also low in calories, fat-free, and delicious- especially when paired with kefir!Servings: 1 - 2
- 3/4 cups Blueberry Lowfat Kefir
- 1 1/2 cups frozen blueberries
- 1 tsp lemon juice
- 3 tsp maple syrup
- 1/2 tsp cinnamon
- 1/4 cardamon
- pinch of salt
- 2 tbsp Organic Plain Whole Milk Kefir
- Blend everything together besides the whole milk kefir, use that for topping the smoothie bowl. You can also top with fresh blueberries.
