Prep Time: 4 hours (including freeze time) Servings: 4 sandwiches
Ingredients
- 1/3 - 1/2 cup Farmer Cheese
- 2 tbsp. almond butter*
- 1 tbsp. pure maple syrup
- 8 Biscoff cookies or other cinnamon-flavored cookies
- 1/3 - 1/2 cup sliced strawberries*
Directions
- Add Lifeway Farmer Cheese, almond butter, and maple syrup to a food processor, and process until fully combined.
- Line a small rectangular container with parchment paper and press down. Place 4 cookies in the container with two cookies side by side and the other two side by side right underneath them to fill the 4 cookies in the bottom of the container.
- Spread 1/4 the farmer cheese mixture from step 1 onto each cookie evenly (about 1/8 cup or 2 tablespoons). Place 1/4 of the strawberries on top evenly (about 1/8 cup or two tablespoons).
- Place the remaining 4 cookies on top of the prepared cookies, and slightly press down to seal. Freeze for 4 hours until set. Remove and thaw for 10 minutes. Enjoy them as is, or slice them first.
- *You can sub the almond butter for any nut butter of choice or the strawberries for any fruit of choice to make different variations.
