Bruschetta Topping:
- 1 lb vine tomatoes, cored and diced
- ¼ cup roughly chopped basil
- 2 garlic cloves, finely minced
- 2 tbsp. extra virgin olive oil
- 1 tbsp. balsamic vinegar
- salt and pepper to taste
- handful of small basil leaves, optional garnish
- toasted baguette slices, for serving
Whipped Farmer Cheese:
- 2 cups Farmer Cheese
- 2 tbsp. extra virgin olive oil
- ¾ tsp. kosher salt
- pinch of black pepper
Directions
- Add the tomatoes, basil, garlic, olive oil, and vinegar to a large bowl and mix well to combine. Season with salt and pepper to taste. Set aside and let rest for at least 20 minutes to allow the flavors to meld.
- Place the Lifeway Farmer Cheese, olive oil, salt, and pepper in a food processor and blend together for about a minute or so, or until a thick, yet whipped texture forms.
