Ahh the potato… the sacred starch we appreciate in so many forms.  We’re especially fond of a crispy potato when it’s paired with a Lifeway Farmer Cheese dip. Today, we have a warm, comforting recipe for Yukon gold potatoes, baked to captivatingly crisp perfection, and served with a Green Goddess dip made from a blend of silky avocado, fresh green herbs, and our tangy probiotic farmer cheese. This side dish that is so good, it may overshadow the main course!

Directions

  1. In a medium to large pot, bring 2 quarts of water to a boil. Add in the potatoes, and boil until soft.
  2. Allow potatoes to cool and add them to a baking sheet. Smash down the potatoes drizzle salt, pepper and olive oil. Bake for 30 mins on 400 degrees.
  3. Add in the salt and pepper to taste. Then add fresh cilantro, garlic cloves, Farmer Cheese, avocado, Plain Lowfat Lifeway Kefir, cashews, and fresh parsley, into a food processor or blender and blend until smooth and creamy.
  4. Dip the smashed potatoes in the farmer cheese dip and enjoy!
