- 2 Slices of your favorite bread (choose whole grain or sourdough)
- 1/2 cup Farmer Cheese
- 2-3 sun-dried tomatoes or fresh Roma tomatoes, sliced
- handful of arugula and/or baby spinach
- 1 avocado, sliced
- sprinkle of salt and pepper
- optional: drizzle of balsamic vinegar or squeeze of lemon for extra flavor.
Directions
- On each slice of bread, spread farmer cheese and a sprinkle of salt and pepper. Top with tomatoes, arugula and/or spinach, and avocado. Add some balsamic vinegar or a squeeze of fresh lemon if using, and enjoy!
