Laura’s Blackened Salmon with Kefir Slaw – @CookatHomeMom

Laura’s Blackened Salmon with Kefir Slaw from @CookatHomeMom is a heart-healthy meal that will be your new favorite on Taco night!

Originally served up in Baja California, the fish taco is a seaside staple that has evolved with contemporary flavors and techniques over the years. The classic fish taco consists of deep-fried fish, a mayonnaise-based sauce, salsa, and lime.

Using pan-seared salmon and slaw dressed with kefir, Laura (@CookatHomeMom) created a healthier version that’s just as tasty. The contrast of creamy avocado, tangy kefir, and acidic onions makes each bite fresh, satisfying, and heart healthy.

Healthy Ingredients

Salmon is rich in omega-3 fatty acids, which are known to lower the risk of heart disease, improve eye health, and supercharge brain development.

Avocados are packed with nearly twenty essential vitamins and minerals that support the brain, immunity, nervous system, and cardiovascular functions.

Kefir has an abundance of probiotics which support a healthy gut, where 70-80% of the cells that make up the immune system are located.

Servings: 8-10

  1. Blackened Salmon Seasoning: In a small bowl, mix together the seasonings. Pat the salmon dry and then coat with the seasoning mix.
  2. Cooking the Salmon: Heat a large, heavy bottomed pan over medium heat, then add in the oil. Once the oil is hot, add the fish to the pan, flesh side down, and cook for about 3-4 minutes. Flip the salmon and cook for another 5-6 minutes, gently pressing down, to desired doneness. (I like mine medium, not too well done!) Remove the salmon and drizzle with lime juice.
  3. Kefir Slaw: Place the cabbage in a medium bowl. In a separate bowl, whisk all remaining ingredients together and pour over the cabbage, stirring until combined.
