Carrot Lox Toast

We’re going against the grain with our gut-healthy Carrot Lox Toast, a plant-based swap of the classic smoked salmon snack. Start with a thick spread of herbed farmer cheese on toasted bread, then pile on the marinated carrots, and garnish with capers and a few sprigs of dill. The tart and tangy herbed farmer cheese paired with carrots marinated in a sweet and sour brine of kefir is the flavor profile your tastebuds deserve. Carrots are a good source of vitamin K and potassium; capers have fiber, vitamin K, iron and may improve liver health; dill has antioxidants to protect cells in the body from free radicals, but the best part of this toast is that the kefir and farmer cheese give it lox of protein and probiotics.

Prebiotics + Probiotics = a Healthy You

Prebiotics are non-living, non-digestible carbohydrates naturally found in a variety of foods. Your body actually can’t digest prebiotics, so they’re what probiotics feed off of to remain actively working in your digestive system. Directions

  1. Herbed Farmer Cheese: Drain and dry out tofu with paper towels, you need the tofu to be as dry as possible In a large bowl, mix together all ingredients for the herbed cheese with Cover and place in the fridge overnight (or for at least 4 hours)
  2. Carrot Lox: make the brine for the carrot lox. In a large mixing bowl, add soy sauce, LF kefir, maple syrup, rice vinegar, capers brine, liquid smoke, garlic powder, smoked paprika, white miso, pinch of salt and pepper. Whisk until combined. Peal long strips of carrots. Soak carrot strips into the brine, cover and place in fridge overnight (or at least 4 hours)
  3. Make the toast: Toast the bagel, spread a desired amount of herbed cheese, add strips of carrot lox and garnish with capers and dill.
