- 2 cups gluten-free all-purpose flour (we like Bob's Red Mill)
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. sea salt
- 1 tbsp. organic coconut sugar
- 1 fresh banana, mashed
- 2 cups Organic Whole Milk Plain Kefir
- *Or you can use our lowfat kefir.
- 2 large eggs
- 1 tsp. vanilla extract
- 1/2 cup mini dark chocolate chips ( plus more for topping)
- 2 cups of freshly cut strawberries and/or freshly sliced bananas
Directions
- In a large bowl, mix together the flour, baking powder, baking soda, coconut sugar, and salt. Stir to combine.
- Blend together the Lifeway Kefir, mashed banana, eggs, and vanilla; add to the bowl with the dry ingredients from step 1.
- Fold in the chocolate chips being careful to mix thoroughly.
- Over medium heat, on a griddle or stove top in a pan, add a scoop of batter. Cook for around 5 minutes on either side.
- Top with fresh fruit and chocolate chips. Enjoy!
