Mornings are always a little brighter with Cloud Egg Toast. Each bite is light, fluffy, and full of flavor. Layer farmer cheese, sautéed spinach, and a baked egg on top of golden brown toast. Ingredients
- 1 egg
- small handful of fresh spinach (1/2 cup packed)
- 1/2 tsp garlic powder (add more if desired)
- pinch of cayenne pepper
- pinch of black pepper
- salt for taste
- 2-4 tbsp Farmer Cheese
- 1 slice of toasted bread
Directions
- Preheat oven to 450 degrees and line baking sheet with parchment paper
- Separate egg by adding the white into a bowl, and keeping the yolk in the shell for easy transfer
- Add in desired amount of salt, pepper, and garlic and whip with a whisk or whisk attachment on a hand mixer until you have stiff peaks
- Spoon the egg whites onto the baking sheet and create a crease in the middle
- Bake the egg white for 2 minutes
- Place the yolk in the crease of the egg white, and cook for an additional 3-4 minutes or until desired doneness
- Slightly sauté spinach, olive oil, salt and pepper
- Toast bread and top with a layer of farmer cheese and sprinkle cayenne pepper to preferred taste
- Layer toast with farmer cheese, spinach and place the egg on top. Add additional salt and pepper if you want
