After our Dubai Chocolate Cups were such a hit, we were inspired to create this Dubai Chocolate Protein Bark made with Lifeway Farmer Cheese that’s a simple recipe you can pull out of the freezer when you need a chilly, sweet, high-protein treat.
Haven’t heard of Dubai Chocolate? This creamy, nutty chocolate creation is made from milk or dark chocolate and is filled with a sweet pistachio cream filling and Kataifi or Kadayif (shredded filo pastry). The range of textures and flavors is what sets this chocolate treat apart from others, as you get notes of sweet pastry, nutty pistachio, bittersweet chocolate, and a creamy consistency that most recipes obtain from tahini (sesame seed paste).

In our Dubai Chocolate Protein Bark, we swap tahini for Lifeway Farmer Cheese, which packs in more protein (and is a complete source of protein), plus live probiotic cultures to support digestion and gut health, along with naturally occurring calcium for bone support and muscle health.

Prep Time: 2-3 hours Servings: 15-20 pieces
Ingredients
- 1/2 cup frozen Kataifi (shredded pastry), thawed
- 1 tbsp. Lifeway Kefir Butter*
- 1 3/4 cups Farmer Cheese
- 3/4 cup pistachio spread (pistachio butter)
- 1/2 cup of milk or dark chocolate (chips or bar), melted
- 1/4 cup raw or roasted shelled pisatchios (unsalted or salted, your choice)
Directions
- Line a large baking sheet with parchment paper. Set aside.
- Melt the tablespoon of Lifeway Kefir butter in a pan over medium heat just until it's melted (don't overcook). Add the Kataifi and toast, stirring frequently (to break it apart) for 5 minutes or until golden brown. Turn off the heat and let cool.
- Add Lifeway Farmer Cheese and the pistachio spread/butter to a food processor, and process until smooth and creamy. Evenly spread this mixture out on the prepared pan with parchment paper in an even layer, forming a large rectangle. Swirl in the melted chocolate, then sprinkle on the toasted Kataifi and the pistachios evenly over the top.
- Freeze for 2-3 hours, or until the bark is firm and set. Cut in pieces with a knife, serve, and enjoy!**
