Farmer Cheese Salmon Tostadas

This meal is easy to make, but boasts a fusion of flavors, giving it unexpected complexity. It starts with Lifeway Farmer Cheese. We spread our probiotic cheese atop a crisp tostada and then add fresh salmon, marinated in kefir and cubed. This is paired with juicy pineapples, spicy jalapeños, herbaceous cilantro, and zesty lime. Our mild cheese allows for the kick of heat from the peppers on the front end, but follows it with a gentle sweetness that balances out the spice perfectly.

Directions

  1. To make the tostadas, in a hot pan drizzle some olive oil, place small tortillas and cook on either side for a few minutes, watch it carefully because they will cook fast!
  2. Mix together ingredients for the marinade.
  3. Remove the skin from the salmon and cut into cubes and pour the marinade over top of the salmon. put those in the airfryer for 6-7 minutes at 400 degrees.
  4. While the salmon is cooking, mix together all ingredients for the salsa.
  5. Assemble by adding a layer of Farmer Cheese, then the salmon, and top it with the salsa. Drizzle some spicy mayo over top and enjoy!
