- 1 1/2 cups all-purpose flour
- 3 1/2 Tbsp granulated sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 cup Organic Whole Milk Vanilla Kefir
- 3/4 cup Farmer Cheese
- 3 large eggs
- 1 tsp vanilla extract
- 1 - 2 Tbsp lemon zest
- 1/4 cup fresh lemon juice
- 1 tbsp. melted Unsalted Kefir Butter
- blueberry jam
Directions
- In a medium mixing bowl, whisk together dry ingredients (flour, sugar, baking powder, baking soda, and salt) until combined.
- In another medium mixing bowl, whisk together Kefir, Farmer Cheese, eggs, and vanilla until blended.
- Add in butter, lemon zest and juice to kefir mixture and blend until combined.
- Pour wet mixture into the dry mixture and whisk until just combined.
- Over medium heat, heat the butter in a griddle or skillet, then pour 1/3 cup batter onto buttered griddle or skillet. Cook until bubbles begin to appear on surface and bottom is golden brown. Flip and cook until golden brown.
- Serve with blueberries, blueberry jam, maple syrup, and extra lemon zest.
