- 1 cup gluten-free rolled oats
- 1 cup Lowfat Plain Kefir
- 1 tsp. vanilla extract
- 2 tsp. maple syrup or honey
- 1 ripe banana, mashed
- 3 egg whites
- 1 tbsp. ground flax or chia seeds
- 1 scoop vanilla protein powder (we used whey)
- Toppings: fresh banana slices, blueberries, raspberries, or your favorites
Directions
- Place all ingredients (except the topping) in a blender and process until completely smooth
- On a non-stick skillet over medium heat, add 1/4 cup batter and cook until edges are golden brown (about 2-3 mins each side).
- Top with your favorite toppings; we topped ours with maple syrup, bananas, and berries.
