For the Sauce:
- 1 cup Farmer Cheese
- 2 1/2 tbsp. ketchup
- 1/2 tbsp. raw honey
- 1/2 tsp. white vinegar or apple cider vinegar
- 1 1/2 tsp. kosher salt, divided
- 1/4 tsp. black pepper
- 1/4 cup dill pickle slices
Burgers:
- 1 pound grass-fed ground beef
- 1/2 tsp. black pepper
- 1-2 tsp. avocado oil
- 4 burger buns, toasted to your liking — use gluten-free if needed
Burger Toppings:
Sliced tomato, sliced red onions, and butter lettuce
Directions
- To a food processor add the farmer cheese, ketchup, raw honey, vinegar, 1/2 tsp. kosher salt, and 1/4 tsp. black pepper, and process on high until very smooth and creamy. Transfer the sauce to a small bowl and mix in the diced pickles. Taste and add more salt as needed. Set aside.
- Add the ground beef, 1 tsp. kosher salt, and 1/2 tsp. black pepper to a bowl, and mix together with a large spoon, or clean hands.
- Divide the ground beef into 4 equally-sized round patties that are flattened to a size that is slightly larger than the buns being used and about 3/4 - 1 inch thick. Use your thumb or a spoon to create a small indent on one side of each patty.
- Set a large skillet over medium - high heat, and lightly coat with avocado oil. Place the prepared patties in the skillet and cook for about 5 minutes, then flip and cook the other side for an additional 5 minutes, or until cooked to preference.
- Assemble the burgers. Place a spoonful of sauce on the bottom half of a toasted bun followed by some butter lettuce and a burger patty. Add a little extra sauce to the top of the patty followed by a slice of tomato and some onions. Repeat this process for the remaining burgers, and enjoy!
