Ingredients
- 1/4 cup Pumpkin Spice Lowfat Kefir
- 3 tbsp self-rising flour or alternative
- 1 tbsp. granulated sugar or alternative
- 1 tsp. pumpkin pie spice
- ½ tsp. baking powder
- 1 tsp. melted coconut oil
- ¼ tsp. vanilla extract
- Garnish with Cinnamon powder
- Topping: fresh whipped cream
Directions
- In a medium coffee mug, whisk to combine all ingredients, except the topping.
- Bake in microwave on high setting for 40-50 seconds, top mug cake with whipped cream, if desired, and cinnamon powder, and enjoy!
