- 16 ounces (1 package) Farmer Cheese
- 1 egg
- 1/3 cup all-purpose flour (use gluten-free if needed)
- 1 tsp. salt
- 2 cups freshly diced tomatoes
- 2 tsp. grated garlic
- 1/4 cup chopped basil
- 2 tbsp. extra-virgin olive oil
- 1 tbsp. balsamic vinegar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/3 cup sesame seeds
- high-heat oil for frying (like avocado oil)
Directions
- In a medium bowl, add the tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper. Mix to combine all the ingredients. Reserve 1/2 cup, then set aside.
- In a large bowl, whisk together the Lifeway Farmer Cheese and egg until combined. Add in the flour and salt. Whisk together.
- Add the sesame seeds to a shallow plate. Using an ice cream scoop as a measure (about 3 tbsp.), scoop the mixture onto the sesame seeds and flatten a bit to form a circle about 2" in diameter and 1/4" thick.
- Coat both sides in sesame seeds. Pour a small amount of oil into a heavy-bottomed skillet and lightly fry in batches for 2 minutes on each side. Drain on a paper towel after each one is done.
- To serve, top each one with a tablespoon of marinated tomatoes from step 1 and top with additional seasonings as preferred. Serve immediately. Enjoy!
