- 4 large eggs, soft boiled
- 1 medium lemon
- 2 cups Farmer Cheese
- 2 slices sourdough bread
- Fresh chopped basil, dill, fresh chives, olive oil, salt and pepper for garnish.
Directions
- To boil the eggs, lay the eggs in a pan and add water just enough to cover the eggs. Heat the pan until the water started boiling. Lower the heat to a simmer and cook for 6 minutes. When done, immediately transfer the eggs to ice water and let them sit for 2 minutes.
- In a medium bowl, mix together Farmer Cheese and juice of 1 lemon.
- Toast sourdough bread, top with Farmer Cheese mixture, sliced soft boiled eggs, fresh herbs, salt/pepper and enjoy!
