- 1/4 cup rice vinegar
- 3 tablespoons sugar
- 1/2 tsp salt
- 1 tsp toasted sesame oil
- 1 tsp soy sauce
- 1/2 teaspoon red pepper flakes
- 1 large cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 1/3 cup chopped peanuts
- 1 tbsp toasted sesame seeds
- 1/2 cup Farmer Cheese
- 1 garlic clove, minced
- 2-4 slices of toasted bread
- few cilantro leaves for garnish
- 3 tbsp crushed peanuts
- Mix dressing ingredients together.
- Prepare thai cucumber salad and toss with the dressing in a medium-sized bowl. Cover and place in the refrigerator for an hour or more.
- Mix minced garlic with farmer cheese and spread over toasted bread.
- Top salad mixture over farmer cheese, garnish with cilantro leaves, peanuts, and enjoy!
