- 12 eggs
- 1 1/4 cup Farmer Cheese
- 1/3 cup fresh spring onion pieces (fresh chives)
- 1/3 cup chopped red bell pepper
- 1/4 tsp. each salt and pepper
- 1/4 tsp. garlic powder
- 6-12 bagels (depending on if you want them served whole or open-face)
- 1/3 cup finely shredded cheddar cheese
- 1/4 cup chipotle mayo or other sauce of choice (like hot sauce)
Directions
- Preheat the oven to 350 degrees, then spray a regular 12-cup muffin tin with non-stick spray, or coat lightly with coconut oil or butter. Set aside.
- In a large bowl, mix the eggs, Lifeway Farmer Cheese, spring onions (chives), chopped red bell pepper, garlic powder, salt, and pepper. Use a hand mixer to combine and whip it up. Then pour into the muffin cups, add a little bit of cheddar cheese in each cup, then bake for 16-20 minutes until set and the cheddar has melted.
- Once the frittata egg muffins have finished cooking, toast the bagels. Once toasted, top with the chipotle mayo or other sauce of choice (hot sauce works great here!), then add the baked frittata egg muffins using one per half of each bagel, and slightly smash down, and then either top each half with another bagel half to eat like a sandwich, or serve them open-face style. If you use them like a bagel sandwich, you'll need 12 whole bagels (not 6).
