Ingredients
- 2 cups fresh cherries, pitted and sliced in half or 2 cups frozen dark sweet cherries, slightly thawed and sliced in half
- 1 tbsp. coconut sugar
- 1 tsp. balsamic vinegar
- 1 cup Farmer Cheese
- 1 tbsp. pure maple syrup
- 1 tsp. fresh lemon zest
- 1 tsp. vanilla bean paste or extract
- 1/8 tsp. kosher salt
- 2 slices sprouted grain whole bread or sourdough bread
- 4 tbsp. chopped pistachios
Directions
- Toast the bread to your liking and set aside.
- To a small bowl add the sliced cherries, coconut sugar, and balsamic vinegar. Mix everything together until well combined. Set aside for at least 15 minutes for the flavors to marinate (you can do this ahead overnight in the fridge to save time if preparing the next morning).
- Place Lifeway Farmer Cheese, vanilla bean paste, lemon zest, and blend together until a smooth texture forms.
- Transfer the whipped farmer cheese to a piping bag and cut off the tip if you want a swirl design (if not, skip this step).
- Spread the Lifeway Farmer Cheese mixture onto 2 pieces of toast, or swirl out on top in a design as shown in the photos using a piping bag.
- Divide the cherries and some of their juices amongst both slices of toast, followed by a garnish of 2 tbsp. chopped pistachios per piece of toast. Best enjoyed right away.
