- 1 cup cane sugar or sugar of choice
- zest from one orange (about 2 tsp.)
- 3 eggs
- 1/4 cup melted Lifeway Kefir Butter*
- 5 tsp. oil
- 2 tsp. vanilla
- 1 cup Farmer Cheese
- 1 ¾ cup all-purpose flour (spooned & leveled)
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. salt
- 2 cups frozen cranberries
- juice from the orange used for the orange zest
- pinch of salt
Directions
- Preheat the oven to 350 degrees. Line a loaf pan with parchment paper, letting it overlap the edges, draping over so you can pour in the batter. Set aside.
- In a large bowl, add in the sugar, orange zest and eggs. Whisk for 1-2 minutes until well incorporated. Next, add in the oil, melted butter and vanilla extract. Mix in Lifeway Farmer Cheese until well blended.
- Mix in the flour, baking powder, baking soda, and salt. Stir just until there are no pockets of flour left; do not overmix. Fold in the cranberries. Pour the batter into a parchment lined loaf pan. Bake for 60-70 minutes until the center is set.
- Allow to cool for 15 minutes before adding in the glaze. While the loaf is still warm, prepare the Ālaze. Whisk all the ingredients together. Add enough orange juice until it’s thick, but pourable.
- Drizzle all over the loaf. Allow to completely cool before slicing. Enjoy!
