Directions

  1. In a medium mixing bowl, whisk together dry ingredients (flour, sugar, baking powder, baking soda, and salt) until combined.
  2. In another medium mixing bow, whisk together Kefir, Farmer Cheese, eggs, and vanilla until blended.
  3. Add in butter, lemon zest and juice to kefir mixture and blend until combined.
  4. Pour wet mixture into the dry mixture and whisk until just combined.
  5. Over medium heat, pour 1/3 cup batter onto buttered griddle or skillet and cook until bubbles begin to appear on surface and bottom is golden brown. Flip and cook until golden brown.
  6. Serve with blueberries, blueberry jam, maple syrup, and extra lemon zest.
