For the Cups:
- 1 tbsp. coconut oil
- 2 cups rolled oats (use gluten-free if needed)
- 3/4 cup natural peanut butter (creamy works best here)
- 7 tbsp. pure maple syrup or raw honey
- 1 tsp. cinnamon
For the Filling:
- 1 cup Farmer Cheese
- 3-4 tsp. pure maple syrup or raw honey
- 1 tsp. vanilla
- 1 tsp. lemon zest
Topping:
- 1 cup fresh mixed berries
Directions
- Preheat and oven to 350° F. Coat 9 cups of a muffin pan lightly with the coconut oil. Set aside.
- Add the oats, cinnamon, peanut butter, and the 7 tbsp. maple syrup or honey to a bowl and stir well with a spatula. The mixture will be thick, so stir until it comes together like cookie dough.
- Once mixed, take about 2-3 tbsp. worth of the mixture to add to the 9 muffin cups. Press some of the mixture to form the crust for each of the prepared 9 muffin cups. Make sure it comes up the sides of the muffin cup so that you get a smooth, filled lining for each of the 9 cups.
- Bake the cups for 18 minutes or until lightly golden brown; do not overbake and watch them carefully. Remove from the oven and let them cool completely before removing and adding the filling.
- As the cups are baking or cooling, prepare the filling. Add Lifeway Farmer Cheese, the 3-4 tsp. maple syrup or honey, vanilla, and lemon zest to a food processor, and blend until thick and creamy. Spoon this mixture evenly into the prepared, baked and cooled cups. Smooth over the top, then add the berries to the tops of the cups. If using strawberries, you'll need to slice them up before topping the cups.
