Crust:
- 3 cups vanilla wafer cookies (or gluten-free alternative cookies or graham crackers), processed into crumbs
- 7 tbsp. slightly melted Salted Kefir Butter
- 2 tbsp. raw cane sugar
Vanilla Filling:
- 3 cups Farmer Cheese
- 3 tbsp. pure maple syrup
- 1 tbsp. lemon juice
- 1 tsp. vanilla extract
Orange Filling:
- 3 cups additional Lifeway Farmer Cheese
- 3 tbsp. pure maple syrup
- 1 tbsp. lemon juice
- 1 tsp. vanilla extract
- 1 tsp. orange extract
- 1 (6 oz.) package of sugar-free orange gelatin
Garnishes:
- navel orange slices
- mandarin orange segments
Directions
- Preheat oven to 350° F. Set a 9 inch pie dish aside.
- In a large bowl, mix the cookie crumbs, melted Lifeway Salted Kefir Butter, and cane sugar together until the crumbs and butter start to come together to form a crust-like dough. Press this into the pie dish and bake for 10 minutes at 350 degrees Fahrenheit. Let it cool completely while you prepare the fillings.
- Make the Vanilla Filling: Add 3 cups Lifeway Farmer Cheese, 3 tbsp. maple syrup, 1 tbsp. lemon juice, and 1 tsp. vanilla extract to a food processor, then process until smooth and creamy; set aside.
- Make the Orange Filling: Add 3 cups Lifeway Farmer Cheese, 3 tbsp. maple syrup, 1 tbsp. lemon juice, 1 tsp. vanilla extract, and 1 tsp. orange extract to a food processor, then process until smooth and creamy.
- Spread 1/2 of the orange layer into the cooled crust. Layer 1/2 the vanilla on top of the orange filling, then dollop the rest of the two layers on top and swirl them together in a random pattern to create a swirl-like effect.
- Smooth out the top of the pie, then refrigerate for 8 hours at least (overnight works great!). Garnish with the orange slices and mandarin segments however you desire. Slice, then enjoy!
- Store leftovers in the fridge. Best served within one week.
