Probiotic Popsicle Mocktails

We’re putting a chilly spin on mocktails today with our Probiotic Popsicle Mocktails that are made by adding a touch of probiotic-rich Lifeway Kefir for extra protein and gut-friendly cultures. This recipe couldn’t be simpler to make and is a fun approach to traditional mocktails. You can serve these outdoors during all your summer gatherings since the popsicles will slowly melt into the sparkling water creating a slushy-like effect. Or, guests can eat them just as they are! You can also turn the recipe into regular popsicles.

To start, you’ll make a frozen mixture made of Lifeway kefir, orange juice, raw honey, lime juice, and fresh orange zest before freezing the pops and serving in glasses with sparkling water and fresh orange peel slices for a garnish. Or, blend the sparkling water into the mixture for the popsicles if you prefer.

Directions

  1. Blend together the kefir, orange juice, raw honey, lime juice, orange zest, and raw honey (or maple or agave). Pour into the popsicle molds.
  2. Freeze the pops until solid (at least 6-8 hours), then put into glasses and pour sparkling water on top, then garnish with orange peel slices. Serve and enjoy, or see below as an alternative option to make into regular popsicles.
  3. As another option, you can also blend the sparkling water into the other ingredients and freeze into pops without serving in glasses with sparkling water.
