In addition, kefir made from whole milk helps absorb key nutrients such as Vitamins A, D, E, and K. Vitamin K is important because it helps your bones absorb calcium. It’s important to know that kefir contains a special trio: vitamin D, K, and calcium – all three crucial elements to support bone health.

For the Puff Pastry:
- 2 Puff pastry sheets of choice
For the Raspberry Reduction:
- 2 cups fresh raspberries
- 1 tsp. natural cane sugar
- 1 tbsp. pure maple syrup
For the Puff Pastry Assembly:
- 1 cup Farmer Cheese
- 1 egg for egg wash
- 1 tsp. additional cane sugar
For the Frosting:
- 1 tsp. Lowfat Plain Kefir
- 2 tbsp. Reserved Raspberry Reduction
- 1/2 cup powdered sugar
Directions
- Preheat oven to 410 degrees (or puff pastry settings) and set a large baking pan to the side covered in parchment paper.
- For the Raspberry Reduction: In a saucepan over medium/high heat, add fresh raspberries, cane sugar, and maple syrup, and cook the mixture down until a reduction (thick sauce) is formed. Set aside 2 tbsp. of this mixture for the frosting.
- To Assemble: Add this mixture and Lifeway Farmer Cheese to a food processor and blend until smooth. Then lay out one puff pastry sheet and add the Lifeway Farmer Cheese/raspberry mixture in the middle of the pastry and spread out thinly, keeping a good 1/2 inch away from the edges of the pastry so you can seal it.
- Whisk the egg for an egg wash. Roll up the puff pastry and brush the egg wash all over the the pastry. Sprinkle with the 1 tsp. cane sugar. Cut about 1/2 inch slices around the puff pastry.
- Add the prepared pastry to the reserved pan and bake according to the puff pastry packaging.
- Once the puff pastries are done, whisk together Lifeway Lowfat Plain Kefir, the reserved 2 tbsp. raspberry reduction from above, and powdered sugar until smooth.
- Drizzle the frosting overtop of the puff pastries and enjoy!
