- 3-4 eggs
- 1/4 cup Farmer Cheese
- 1 cup mushrooms
- 2 tbsp balsamic vinegar
- 1/2 cup garlic aioli
- Bagels of choice (we used everything seasoned bagels)
- Salt and pepper to taste
- 2 tbsp olive oil
Directions
- In a bowl, scramble 3-4 eggs, salt and pepper to taste, and farmer cheese.
- Over medium heat in a medium sized pan, pour in the scrambled eggs, and let sit for 4-5 minutes. Fold the eggs in half and cook for 4-5 more minutes, flipping halfway through.
- In a different medium sized pan, add in sliced mushrooms and sauté until soft. Add in balsamic vinegar and cook for an additional 2-4 minutes.
- Toast bagel, Top with cooked Farmer Cheese Egg, sautéed mushrooms, and garlic aioli. Enjoy!
