For the Sherbet/Ice Cream:
- 2 cups fresh raspberries (can also use frozen)
- 1 1/4 cups Organic Plain Lowfat Kefir
- -or you can use any of our kefir varieties here you prefer
- 1/4 cup raw honey*
You will also need:
- 1 bottle sparkling rosé or sparkling rosé grape juice
- fresh raspberries for garnish
Directions
- Add fresh raspberries, Lifeway Kefir, and raw honey to a food processor or blender, and blend until smooth. Pour into an air-tight container and freeze for 3-4 hours, or until set.
- Once the mixture is frozen, set on the counter 10-15 minutes to thaw just slightly to scoop it.
- Ninja CREAMi Method: Pour into 1-2 pints (size dependent), and freeze for 24 hours. Process according to the machine instructions.
- Without a CREAMi: After step 2 above, you can use it then or re-blend it to improve the texture, then freeze another hour to get a similar effect.
- Pour the sparkling rosé in a large punch bowl or in glasses, then add a scoop of the frozen sherbet/ice cream into each glass or the bowl. Garnish with fresh raspberries, as desired. Enjoy!
- *If you prefer to make this without honey, simply substitute 1/4 cup extra kefir.
