- 1 1/2 cups gluten-free graham cracker crumbs
- 1/2 cup melted butter
- 16oz Farmer Cheese
- 16oz cream cheese
- 14oz condensed milk
- 2 eggs
- 1tsp vanilla extract
- 5 cups strawberries, chopped
- 1/4 cup sugar
- 2 tbsp honey
Directions
- Blend the graham crackers in a food processor until finely crushed.
- Place blended graham crackers in a small bowl and mix in melted butter.
- Add the graham cracker mix to the bottom of a oiled springform pan and set aside.
- In a medium bowl with a standing or hand mixer, mix together the farmer cheese and cream cheese until creamy and smooth.
- Add in sweetened condensed milk, vanilla and eggs and blend for about 2 minutes.
- Transfer the cream mixture to the springform pan over the graham cracker crust.
- Place the springform pan in the Air Fryer at 300 degrees for 25-30 minutes, or until the center is no longer jiggling. It will wiggle a little but it shouldn't be wet.
- Refrigerate for 6-8 hours or overnight.
- In a medium pan over medium high heat, add chopped strawberries, sugar, and honey and melt down until you have a jam like texture. You can make this in advance and chill or pour over the refrigerated cheesecake warm.
- Add regular strawberries to top and enjoy!
