- 6-8 Fresh apricots
- 1 tbsp cane sugar
- 1/2 lemon, juiced
- 1 cup Farmer Cheese
- 1/2 vanilla bean
- 1/4 tsp vanilla extract
- 4 large eggs
- 2/4 cups
- 1 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 4-5 slices of Challah Bread
- 1/3 sliced almonds
- powdered sugar
- maple syrup
Directions
- Preheat oven to 450 degrees. Slice and half apricots, and place cut side facing up on a large baking sheet. Sprinkle sugar and lemon juice over top of the apricots. Roast for 40 minutes or until soft and caramelized.
- Combine Farmer cheese with vanilla bean seeds, vanilla extract and salt. Set in fridge until ready to use.
- In a bowl, whisk eggs, kefir, ground cinnamon and salt. Dip each side of sliced challah bread in the mixture.
- In a large pan over medium/high heat, place in the soaked bread and cook on each side for 5-10 minutes, or until browned on each side.
- Serve with slices of apricots, farmer cheese mixture, almond slices, powdered sugar and maple syrup.
