- 1 1/2 cups fresh mixdd berries (or frozen mixed berries, set at room temp for 10 minutes to defrost slightly)
- 1 tsp. extra virgin coconut oil
- 1 tbsp. pure maple syrup
- 1/8 cup organic cane sugar (or dry sweetener of choice)
- 1/2 cup finely ground almond flour
- 1 tsp. ground cinnamon
- 1/2 tsp. kosher (coarse) salt
- 1/4 tsp. ground nutmeg
- 8 slices sourdough bread with crust on
- 2 tbsp. freshly squeezed orange juice (from 1 small orange)
- 1 1/2 cups Blueberry Lowfat Kefir
- Topping: Farmer Cheese, sliced almonds, and fresh berries
Directions
- Place the berries, sugar (or alternative sweetener), and orange juice in a saucepan, and cook on medium-low heat for about 10-15 minutes, gently smashing down the berries as the mixture cooks. Allow the mixture to simmer for an additional 10 minutes until thick and jammy. Place in fridge until french toast is ready.
- In a medium bowl, whisk together the kefir, maple syrup, almond flour, cinnamon, nutmeg, and salt. Transfer the mixture to a shallow dish.
- Heat a large skillet over medium-low heat with some coconut oil.
- Coat both sides of a slice of bread in the mixture.
- Once the skillet is hot, cook each slice of bread for 2 minutes or until golden brown, then flip and cook for another 1-2 minutes.
- Serve with the prepared berry compote, Farmer Cheese, sliced almonds, and pure maple syrup if desired (for drizzling)
