Directions

  1. Toast the bread to your preference. While it's toasting, add the roasted beet or steamed beets to a food processor with the Lifeway Farmer Cheese, lemon juice, olive oil, 1/8 tsp. salt, and process into a smooth, whipped purée. Set aside.
  2. In a toaster oven or on the top rack of a regular oven, broil the cherry tomatoes on a sheet pan covered in foil for 5-7 minutes until just blistered on top (or you can leave them raw and just slice them in half, if preferred).
  3. Spread the farmer cheese and beet mixture from step 1 onto your pieces of toast, then top each piece with slices of avocado, 1/4 cup the cooked tomatoes, and 1/4 cup micro-greens. Add a sprinkle of flaked sea salt, freshly cracked black pepper, and chia seeds, then slightly mash down. Enjoy!
