- 6-8 eggs
- 2 tbsp. olive oil
- juice of 1 lime
- 2 tbsp. mustard
- 1/2 tbsp. garlic
- salt and pepper to taste
- 1/2 Farmer Cheese
- Chives, for topping
- pico de gallo for topping
- sourdough bread
Directions
- Crack eggs on a baking sheet, try not to crack the yolk. Bake at 350 degrees for 10 minutes, or until eggs are baked.
- Add cooked eggs into a food processor, along with olive oil, Farmer Cheese lime, mustard, garlic, salt and pepper. Blend until smooth.
- Toast sourdough bread, spread the toast with egg and farmer cheese mixture. Top with chives and pico de gallo.
