Kefir Waffles
- ¾ cup all-purpose flour
- ¾ cup cornmeal
- 1 tbsp ancho chile powder
- 1 tbsp sugar
- 1 tsp baking powder
- 1½ tsp kosher salt, plus more
- 1½ cups Organic Plain Whole Milk Kefir
Toppings
- dollops of Farmer Cheese
- black beans
- sunny-side-up eggs
- sliced avocado
- sliced scallions
- sliced radishes
- cilantro leaves
- hot sauce
- hot honey
- jalapenos
- lime wedges
Directions
- Heat a waffle iron until very hot. Working in batches, pour ½ cup batter onto iron and cook until golden brown and cooked through, about 2 minutes. Transfer to oven (200 degrees) and let the waffles crisp up. Top the waffles with your favorite Mexican flavors and enjoy!
