Directions

  1. Make the pistachio pudding: Mix Lifeway Kefir and the pistachio pudding mix in a bowl with a hand mixer until it mixes completely and thickens up. Set in the fridge for 2.5 hours to firm up.
  2. While the pudding is setting, go ahead and make the farmer cheese layer. Whip the farmer cheese, vanilla, and honey in a food processor, then transfer to a bowl, and place it in the fridge to chill while the pudding sets.
  3. Once the time has passed, or a few minutes before, make the chocolate syrup. It's best not to do this ahead of time since it hardens up the longer it sits. Blend the melted coconut oil with the cocoa powder and the honey in a small blender or a small bowl until it thickens into a sauce/syrup texture. Set aside.
  4. Assemble the cups: Place 4 small glasses on the counter, and place 1/4 the pudding mixture in the bottom of each cup. Add 1/8 cup granola per cup. Layer 1/4 the farmer cheese mixture on top of that until all the glass have a layer of pudding, granola, and the whipped farmer cheese mixture. Top each cup with 1/8 cup pistachios.
  5. Drizzle the chocolate syrup on top. It will harden into a shell the longer it sits on the deserts for an added layer of indulgence. Garnish with fresh mint if desired, then grab some spoons and enjoy!
