Kefir Ice Cream
- ½ cup Vanilla Lowfat Kefir
- ½ cup Coconut Honey Whole Milk Kefir
- ½ frozen banana
- 1 vanilla bean
Whipped Farmer Cheese Cream
- 2/3 cup Farmer Cheese
- ¼ cup heavy cream
- 1 tbsp maple syrup
- ¼ tsp vanilla extract (or half vanilla bean)
Optional Toppings:
dark chocolate syrup, chopped almonds, unsweetened coconut shreds/flakes, and a cherry
Directions
Kefir Ice Cream:
Add kefir, banana, and vanilla bean to the pitcher of a high-powered blender. Blend on high until smooth, or until desired consistency is reached. Pour into a container and freeze for 4 - 6 hours. Scoop, add toppings, and enjoy!Whipped Farmer Cheese Cream:
Combine the farmer cheese, heavy cream, maple syrup, vanilla, and a pinch of Himalayan salt in the bowl or hand mix or add to a standing mixer. Gradually mix from low to high speed, whip until the creamy mixture is thick and stiff, about 5 minutes.Toppings:
Dark chocolate syrup, chopped almonds, coconut shreds, and a cherry.
