Directions

  1. Line a standard 12-inch muffin pan with 12 muffin liners.
  2. Melt the butter in a large skillet set over medium heat. Add the kataifi, and cook, stirring often while slightly breaking up the strands, until golden brown. Transfer to a bowl and set aside to cool.
  3. Place the chocolate chips and coconut oil in a medium microwave-safe bowl and microwave in 30-second increments, mixing in between, until melted.
  4. Spoon about 1 tsp of the melted chocolate into each muffin liner, or just enough to coat the bottom and a little up the sides of the liner. Place the pan in the refrigerator or freezer for about 10 minutes, or until the chocolate has set.
  5. Place the pistachios in the food processor and blend on high for 5-6 minutes, or until smooth. Stop the machine, scrape down the sides, then add the farmer cheese, tahini, and maple syrup. Blend again on high until smooth.
  6. Transfer the pistachio mixture to a medium bowl and add the toasted kataifi. Mix to combine. Spoon about 1 tbs of the pistachio filling into each cup. Using a moistened finger, press the filling down so that it’s flat, but be sure to leave a little edge around the filling.
  7. Remelt the chocolate if needed, then spoon the remaining chocolate amongst the remaining cups. Garnish each cup with chopped pistachios.
  8. Place the cups back in the refrigerator for 30 minutes, or until the chocolate has set before enjoying.
