Directions

  1. For the Dough:
  2. In a large bowl, combine warm milk, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  3. In a separate bowl, whisk together flour and salt.
  4. In a large bowl, cream together softened butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the yeast mixture, until a dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  6. Place the dough in 1 a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  7. Make the filling:
  8. While the dough is rising, prepare the farmer cheese filling. In a bowl, combine Lifeway Farmer Cheese, sugar, flour, egg, vanilla extract, and lemon zest. Mix until smooth and creamy.
  9. Assemble the King Cake:
  10. Punch down the risen dough and turn it out onto a lightly floured surface. Roll the dough into a large rectangle (about 12x18 inches).
  11. In a small bowl, combine sugar and cinnamon for the swirl. Brush the melted butter over the dough, then sprinkle evenly with the cinnamon sugar mixture.
  12. Spread the farmer cheese filling evenly over the dough, leaving a 1-inch border along one of the long edges.
  13. Starting from the opposite long edge, roll the dough tightly into a log, pinching the seam to seal.
  14. Carefully transfer the log to a baking sheet lined with parchment paper. Shape the log into an oval or circle, tucking the ends underneath and pinching to seal.
  15. Cover the king cake and let it rise for another 30-45 minutes.
  16. Bake the King Cake:
  17. Preheat oven to 350°F (175°C).
  18. Bake the king cake for 30-40 minutes, or until golden brown. Let cool completely on a wire rack.
  19. Decorate the King Cake:
  20. While the cake is cooling, prepare the icing. In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  21. Drizzle the icing over the cooled cake. Sprinkle with purple, green, and gold sanding sugar.

    Notes

  • (Optional) Hide a small plastic baby figurine inside the cake before baking.
