Directions

  1. Preheat the oven to 375F. Line a 12-cavity muffin pan with muffin papers.
  2. Make the Cinnamon Sugar Filling by whisking the ingredient together. Set aside.
  3. Make the Streusel: Pulverize the oats, coconut sugar, cinnamon and butter together in a food processor to get a coarse crumb but without large lumps. Set aside.
  4. In a medium bowl, whisk together the ingredients for the muffin batter. Mix the flour, baking powder, baking soda, and salt in a medium-sized bowl.
  5. In a separate large bowl, beat the kefir butter, coconut sugar, vanilla, and eggs until creamy and fluffy.
  6. With the mixer on a low speed, mix in about 1/2 of the muffin batter mixture from step 4 , followed by the Lifeway Farmer Cheese and the Lifeway Kefir.
  7. Beat in the rest of the muffin batter mixture to combine, then stop mixing as soon as the ingredients are combined. Be very careful not to over mix the batter.
  8. Spoon about 1/8 cup muffin batter into the bottom of each lined muffin tin.
  9. Sprinkle the cinnamon sugar mixture on top of each muffin batter in the muffin tins, making sure to divide the mixture evenly between the 12 muffins.
  10. Spoon the rest of the muffin batter on top after covering the cinnamon sugar layer of all 12 muffins. The muffin cups should be 3/4 full at this point.
  11. Sprinkle the streusel on top of each muffin. You want the top of each muffin to be evenly covered with small crumbles.
  12. Bake in the preheated oven for about 23-27 minutes, or until an inserted toothpick comes out clean.
  13. Cool in the pan for 10 minutes, then remove from the pan and continue cooling on a wire rack.
  14. For the glaze, whisk the powdered sugar with Lifeway Kefir until smooth. Whisk in a little extra kefir or powdered sugar as needed. It should be thin enough to drizzle, but still white in color.
  15. Drizzle the glaze onto the cooled muffins.
