Ingredients
- 1/2 cup Whole Milk Vanilla Kefir
- 1/2 cup pure pumpkin puree (not canned pie filling)
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup mini dark chocolate chips
- 1 scoop vanilla protein powder of choice (we used whey)
- 1 tsp. vanilla extract
- 1/2 tsp. pumpkin pie seasoning (or a mix of cinnamon, ginger and/or nutmeg and cloves)
- 1/2 tsp. turmeric
Directions
- Blend everything together in a large bowl except for the mini dark chocolate chips. Stir the mixture thoroughly since coconut flour soaks up a lot of liquid due to its high-fiber content and will thicken quickly on you. If you need to use an electric mixer, feel free.
- Once everything is mixed, add the chocolate chips in when the batter has formed. Place mixture in the refrigerator to firm the dough, at least 4-6 hours or overnight. Enjoy within 3-4 days and keep refrigerated.
