- 4 tbsp Vanilla Whole Milk Kefir
- **or if vegan, sub Vanilla Oat
- 1/2 cup pure pumpkin puree (not canned pie filling)
- 1 cup almond flour
- 1/2 cup mini dark chocolate chips
- 1 cup coconut flour
- 2-3 tbsp maple sugar (dry sweetener--sub coconut sugar as an alternative)
- 1/8 tsp. salt
- 1 tsp vanilla extract
- 2-3 tbsp. coconut oil, slightly melted.
- 1/2 tsp. pumpkin pie seasoning
- 1/2 tsp. turmeric
Directions
- Blend everything together in a large bowl except for the mini dark chocolate chips. Stir the mixture thoroughly since coconut flour soaks up a lot of liquid due to its high fiber content and will thicken quickly on you. If you need to use an electric mixer, feel free.
- Once everything is mixed, add the chocolate chips in when the batter has formed. Place mixture in the refrigerator to firm the dough, at least 4-6 hours or overnight. Enjoy within 3-4 days and keep refrigerated.
