For the Sweet Potatoes:
- 2 sweet potatoes, diced
- 1 tsp. paprika
- 1 tbsp. extra-virgin olive oil
- salt and pepper, to taste
For the Salad:
- 1 cup Organic Whole Milk Plain Lifeway Kefir
- juice of a lemon
- lemon zest (to taste, from about 1/4 a lemon)
- 1 tsp. onion powder
- 1 tsp. smoked paprika
- 1 tsp. black pepper
- 1 tsp. hot honey
- 1/3 an onion, chopped
- 1/4 cup Farmer Cheese
- 1 tbsp. chopped parsley
- 8 oz. coleslaw
For the Dressing:
- 1/4 cup dijon mustard
- 1/4 cup hot honey
- 1/2 tsp. smoked paprika
- juice of 1/2 a lemon
- lemon zest (to taste)
Directions
- For the sweet potatoes: Dice the sweet potato, and toss them in 1 tsp. paprika, olive oil, and salt/pepper to taste. Roast in oven on a baking dish or in an air fryer at 400 degrees for 30 minutes, or until the potatoes are soft (fork tender). Set aside.
- Mix together all ingredients for the salad base. Set aside.
- Mix together all ingredients for the dressing.
- Add everything together in a bowl, top with coleslaw, and drizzle the dressing on top.
- This recipe serves 3-4 and keeps for 2-3 days in the fridge. Enjoy!
