For the Salmon and Glaze:
- 4 salmon fillets (about 6 oz each, skin-on or skinless)
- 1/2 cup Lowfat Plain Kefir
- 1/4 cup pure maple syrup
- 1 tbsp. mustard of choice
- 1 tbsp. low sodium soy sauce
- 2 cloves fresh garlic, minced
- 1/2 tsp. smoked paprika
- 1/2 tsp. black pepper
- 1/2 tsp. sea salt
- 1 tbsp. extra virgin olive oil (for searing the fish)
For the Honey Butter Mashed Potatoes:
- 2 pounds of Yukon Gold Mashed Potatoes
- 4 tbsp. unsalted butter
- 2 tbsp. raw honey
- 1/2 cup additional Lowfat Plain Lifeway Kefir
- Sea salt and pepper, to taste
- Fresh chives and/or flat leaf parsley as a garnish
Directions
For the Honey Butter Mashed Potatoes:
Place potatoes in a large pot, cover with salted water, and bring to a boil. Cook until fork-tender, about 15 minutes. Drain and return potatoes to the pot. Add butter, honey, and kefir. Mash until creamy and smooth. Season with salt and pepper. Keep warm in the pot with the lid on while you prepare the rest of the dish.For the Salmon:
In a small bowl, whisk together kefir, maple syrup, Dijon mustard, soy sauce, garlic, smoked paprika, pepper, and salt. Place the salmon on a small pan and either air-fry or cook in a small broiler oven for 5 minutes. After the 10 minutes. Then remove, add to a small skillet pan, and pour the sauce over the top of the salmon. Broil it on medium high heat until the sauce thickens and starts to bubble up. Turn off the heat, remove from the pan, and place on a plate.Assemble the Dish:
Scoop honey butter mashed potatoes onto plates, then top with the salmon, and pour the glaze over the top. Garnish with fresh chives if desired. Serve warm and enjoy!
