For the Cheesecake Mixture:
- 2 cups Farmer Cheese
- 6 oz. white chocolate, melted (we used Lily's white chocolate chips)
- 3 tbsp. raw honey
- 2 tsp. vanilla extract or vanilla bean powder
For the Cracker Crumb Base:
- 1 cup crushed organic graham crackers (like Annie's) or gluten-free alternative (like Simple Mills Honey Cinnamon Sweet Thins)
For the Toppings:
- 1 cup fresh cranberries, washed and patted dry
- 1 cup fresh raspberries, washed and patted dry
- Optional: drizzled white chocolate for the top of the berries and/or sliced almonds or chopped walnuts or pecans
Directions
- Melt the white chocolate in the microwave on low for one minute or so (or just until melted), or use a double-broiler method over the stove. Make sure not to heat to the point of boiling (it should just be slightly melted). Set this aside.
- Get out four small glass cups. In a food processor, crush up the graham crackers or gluten-free alternative into crumbs. Evenly distribute the mixture into the four cups and pat it down into the bottom of the cups with the back of a spoon. Set the cups aside.
- Wipe out the food processor or clean and dry it out, then whip together the farmer cheese, honey, melted white chocolate chips, and the vanilla until you get a whipped pudding texture. Spoon 1/4 of this mixture into each of the four cups.
- Top each cup with 1/4 cup of fresh cranberries added 1/4 cup of fresh raspberries. Drizzle white chocolate over the top, if desired, and add sliced almonds, crushed walnuts, or chopped pecans if using. Place in the fridge to set for 1 hour before serving, then enjoy!
- These cups will keep 3-4 days in the fridge if you want to make them ahead. Just note, beyond that the crumbs may become soft in the bottom of the glasses. Best served fresh or the next day. Enjoy!
