For the Roasted Veggies:
- 2-3 large carrots
- 2 beets (any color)
- 1 small yellow onion
- 1/2 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/4 tsp. sea salt
- 1 tbsp. extra-virgin olive oil
- juice of 1 lemon
Whipped Farmer Cheese Cream:
- 1 1/2 cups Farmer Cheese
- juice of a lemon
- 1/2 tbsp. fresh basil, minced
- 1/2 tbsp. fresh tarragon, minced
- 1 tbsp. fresh scallions or chives, minced
- pinch of salt and pepper
Directions
- Preheat the oven to 400° F. Line a large baking sheet with parchment paper and set aside.
- Wash the carrots, beets, and onion, and remove the stems (and peels), and cut them up into 1 inch cubes. Add them to a large bowl, and add the juice of a lemon, the olive oil, garlic powder, salt, and pepper. Toss to coat them well.
- Spread them out on the baking pan lined in parchment paper, and roast for 35-45 minutes, or until they start to caramelize and turn golden on top. Remove from the oven, and make sure they're fork tender. If so, they're done.
- While the veggies cool a little, prepare the whipped farmer cheese mixture. In a food processor, whip the farmer cheese together with the lemon juice, herbs, salt, and pepper.
- Plate the veggies and dollop them with the whipped farmer cheese mixture.* Enjoy!
- *If you have leftovers, wait to serve the farmer cheese mixture until you reheat the veggies (keep separate in the fridge).
